Avocado, Bacon and Feta on rye

INGREDIENTS
- 2 rashers lean bacon
1/2 avocado
1/2 round feta (30g)
1 tomato, sliced
1 slice rye
Vegan or Dairy free option: replace bacon with 4 tbsp hummus and feta with vegan cheese or leave out
MAKING THE MAGIC
In a non stick pan, sear the bacon and tomato on both sides until cooked.
Toast the rye and mash the avocado onto the rye.
Place the tomato onto the avo and crumble over the feta
Serve the bacon on the side, next to the avo toast or place on the toast.
