Broccoli, Green Olives and Chicken Salad

INGREDIENTS

    1/2 Cup Steamed Broccoli
    1/2 Cup Steamed Carrots
    2 tsp Olive oil
    8 Green olives or black
    90-100g Shredded, cooked chicken
    10 Almonds
    1 Cup Greens (rocket, baby spinach, lettuce etc.)
    Salt to taste
    1 Tbsp Chopped coriander
    1/6 Lemon wedge

MAKING THE MAGIC

Mix all the ingredients together except for the coriander and lemon wedge. Pour mixed ingredients into bowl.

Garnish with coriander and squeeze lemon wedge onto salad.

TIP: adding a little chilli and garlic dressing would go well with this dish.
