Delicious Mince

INGREDIENTS
- 3 Tbsp Olive Oil
1 kg Beef Mince
500 g Pork Mince
1 Large Onion, chopped finely
3 Carrots, Grated
1 Heaped tsp
Tomato Paste
4 Cloves Garlic, chopped
1/2 Red Chilli, chopped
1 Spring Onion, Chopped
2 Tbsp Freshly chopped herbs (I used rosemary, oregano and thyme)
1 Large Tin (800g) chopped Tomatoes
4 Large Tomatoes, peeled and chopped roughly
Salt to taste (1 tsp)
Black pepper to taste (1/4 tsp)
Optional: 1/3 Cup Basil, chopped to add with your meal
MAKING THE MAGIC
Heat 1 Tbsp oil in pot and brown 750 g of mince (use a fork to break up the mince to allow for better browning). Once brown remove into a glass bowl and leave aside. Repeat with the remaining 750 g of mince. Once browned remove and place in mince bowl.
With the remaining oil, sauté the onions and carrots until onions are translucent in colour. Add in the mince, tomato paste, chilli, herbs and spring onion. Brown for a further 5 minutes, you may need to stir often to prevent burning at the bottom of the pot.
Add in the tinned tomatoes, freshly chopped tomatoes, salt, pepper and fill the empty tomato tin with 2/3 water (you can use beef stock but I really don't think you need it) and pour into mince. Bring to the boil for a few minutes, stir well then simmer for 2 hours. If you find the mince is getting thick, add in a little extra water, stir occasionally.
Taste, season a little more if you need or add some extra freshly chopped herbs (basil).
Pour over pasta or courgette noodles and sprinkle over a little parmesan cheese.
