INGREDIENTS
- 2 Eggs
1 tsp Basil Pesto or Herb dressing
Salt & Pepper to taste
1/3 Cup Baby Spinach
5 Cherry tomatoes, sliced in half
30 g Feta
MAKING THE MAGIC
Preheat oven to 180 degrees Celsius.
Break two eggs into a small bowl, beat in the basil pesto and a little salt and pepper to taste. Pour into large muffin pan or into a small pot. Stir in the baby spinach and cherry tomato. Top with feta and bake for 18-20 minutes until just cooked, serve hot.
