Green Bean, Almond and Herb Salad

INGREDIENTS

    500 g green beans-sliced in half
    1.5-2 liters boiling water
    1/3 cup olive oil
    1/3 cup fresh coriander-chopped 
    1 heaped tsp honey
    2 cloves garlic-crushed
    1/2 lemon-juiced
    salt and pepper to taste
    2 spring onions-chopped
    1/2 cup toasted almonds-chopped
    2 punnets cherry tomatoes

    Option: if you do not like coriander, replace with a mix of fresh basil and parsley

MAKING THE MAGIC

Place beans in glass bowl and pour over boiling water, leave to stand for 10 minutes

Mix together the olive oil, lemon juice, honey, coriander and seasoning.

Strain beans and in a large bowl mix all the ingredients together.

Heat a saucepan and then toss the bean salad mix in a hot pan with a handful of cherry tomatoes for 8 minutes, then serve with your meat or vegan protein option.
