Italian Chicken

Basil & Tomato style chicken

INGREDIENTS

    ⅔ Cup Italian tomato sauce or Arabbiatta
    120 g Chicken, diced into small bite size pieces (or use tofu or vegan alternative)
    6 Fresh basil leaves, torn into small pieces
    ⅓ Cup Cheddar Cheese, grated
    1 Cup Zucchini Noodles

MAKING THE MAGIC

In a pan over medium heat, add the sauce and chicken. Cook for 6-8 minutes until the chicken is nearly done.
Add the zucchini noodles and cook for an additional 1-2 minutes, stirring occasionally. If the sauce is too thick, add 1-2 tablespoons of water to adjust the consistency.
Serve directly from the pan or transfer to a bowl, then top with fresh basil leaves and cheese.
