Low Carb Wrap

INGREDIENTS

    1 tsp Butter
    2 Eggs
    1 Tbsp chopped up Spring onion (use the green part)
    Salt and pepper to taste
    1 low carb, gluten free wrap or Keto wrap or FODMAP friendly
    ¼ Cup Grated cheese
    1-2 Tbsp Avocado smashed
    1 Handful Rocket
    1 Tbsp Parmesan

MAKING THE MAGIC

Melt butter in a medium saucepan.
Beat 2 eggs, spring onion, salt and pepper together.
Pour into the pan and cook on a medium heat for 20-30 seconds, place wrap on-top and leave to cook on a low heat for a further minute.
Gently loosen the egg with a spatula and flip the egg wrap over (make sure egg has cooked through and not still raw).
Sprinkle cheese over one half of the wrap then close the wrap in a half moon shape.
Cook on low for 30 seconds then place onto a plate.
Spread over avocado
Top with rocket and sprinkle over parmesan cheese.

TIP
You can stuff goats cheese and sautéed mushrooms in the middle instead of cheese.
