Minted Yoghurt, Chilli & Coriander Dressing

A versatile dressing

INGREDIENTS

    3 cups Greek yoghurt, full cream
    3 garlic cloves-crushed
    1 red chilli-deseeded and chopped
    1/3 cup coriander, fresh-chopped
    1/2 lemon-juiced
    pinch of salt

MAKING THE MAGIC

Mix all of the ingredients together, taste and season if your feel it needs more lemon juice, salt or chilli.

This is great over roasted vegetables, marinating your meats, served dolloped over pan seared meat or use as a coleslaw dressing. 

Dairy Free option: replace the yoghurt with coconut yoghurt.
