Pork Loin, Bacon and Bean Salad

INGREDIENTS

    2 tsp Olive Oil
    100 g Pork loin-seasoned with a little salt and a few pinches of paprika
    3 Slices Bacon, chopped
    1/4 Onion, chopped finely
    1 Cup mixed & cooked Green Beans and broccoli
    1 Cup Rocket
    1 Tbsp Fresh herbs chopped (basil, coriander, garlic chives)
    Salt to taste
    Squeeze of 1/4 lemon
    Garnish with paprika

MAKING THE MAGIC

Pan sear pork in olive oil, cook for 3-4 minutes on either side. In the same pan, pan sear the bacon for a few minutes then add in the onion and sauté for a few minutes. Add in the beans,broccoli and herbs, sauté for a further 2 minutes. Squeeze a dash of lemon, season with salt and taste.

Just before serving, toss in rocket and plate up. Garnish with a sprinkling of paprika.
