Shakshuka

Bring on the bite

INGREDIENTS

    1 Tbsp olive oil
    1 onion, sliced
    2/3 tsp cumin, ground
    1/2 tsp paprika, ground
    1/4 tsp red chilli flakes, crushed (optional)
    1/2 tsp turmeric, ground
    4 sprigs thyme
    1 tsp sugar
    1/4 tsp salt
    2 tins tomato
    3 cloves garlic, chopped
    1 green pepper, sliced
    8 eggs

    Optional- take out 1 tin of tomato and add in 6 freshly peeled and chopped tomatoes...this adds more flavour to the dish
    Vegan option:replace eggs with tofu or falafels 

MAKING THE MAGIC

In a pan, saute the onions in olive oil for 5 minutes.

​Add in the cumin, paprika, turmeric and chilli flakes, stir for a minute. Mix in the thyme, sugar, salt, tomatoes, garlic  and green pepper, simmer for 20 minutes. 

Make 8 wells in the sauce. Lightly crack an egg into a small bowl and gently pour the eggs into the wells.
Once you have done all 8, lightly season with salt and pepper, cover pan and simmer for approximately 8 minutes, until the egg whites  have cooked and the yolks are still runny. Serve on crusty bread and garnish with thyme.
