Summer Tuna Salad

INGREDIENTS

    2 Red pepper- chopped
    2 yellow pepper-chopped
    1 cucumber-chopped
    4 tins tuna in brine-drained
    2 cups fresh coriander-chopped or basil & parsley
    6-8 Tbsp Mayonnaise- Gluten free, Dairy free
    1/2 Lemon, juiced
    Salt and pepper to taste
    4 Tbsp Seeds

MAKING THE MAGIC

In four serving bowls, evenly distribute the  peppers and cucumber.

Evenly distribute tuna on-top of the pepper mix, followed by the coriander, lemon juice, mayonnaise, salt and pepper.

Finish off with a sprinkling of toasted seeds
